The Sweet Potato Recipe

about 8 sweet potatos (i choose the smaller more cylindrical ones because that's what i saw an african american woman do at Iovine's).
butter
walnuts
cinammon
brown sugar
cored pears (optional)
ground ginger (optional)

skin the po's. dice into whatever shape floats your boat. toss them in a baking sheet. sprinkle cinammon on it. cut chunks of butter and place strategically around the baking sheet on top. put in a preheated oven at 325-375 degrees. You just let that go, intermitently tossing to make sure butter is getting on all them. meanwhile in a frying pan dump in those walnuts on medium heat. give it a little time with gentle agitation, maybe some big jolts of the pan to move things around like your Tyler Florence preparing an authentic, creative entree for Applebee's. you will do this to get some oils out of the walnut before adding butter. once the butter you added melts add brown sugar. mix. if there is brown sugar that is not wet with butter, add more. let this go for a little while. then turn heat to low and peace out of the kitchen for a while. check intermitently to see how done your sweet po's are. when they are nearing completion, get them out, spoon the butter brown sugar walnut mixture on top, let any residual butter drip on in, and return to the oven for maybe ten to fifteen minutes. when its done collect the fries and drizzle dripping over top of them.

for the optional pear topping/bottoming. use a mandoline or some hot knife skills to cut thin disks of pear. in the same frying pan you already used, add more butter, some brown sugar, let it mix/melt then add pear slices, layer them in. then you will sprinkle ginger over top. toss this on top of final product. viola.
