Here's a really refreshing sandwich that I have been making this weekend:
4 cups mixed salad greens
1 red bell pepper
1 yellow bell pepper
Brie
Apricot and Ginger Cream Cheese (From Whole Foods)
Olive Oil
Salt
Crusty Italian Bread
Toss the salad greens with cut up bell peppers and dress with olive oil, salt and pepper. Spread the cream cheese on the bread, and add brie. Top with greens and peppers and enjoy.
