Coconut Rice

2 c water
1 1/2 c canned unsweetened coconut milk (i add the whole can and
subtract the extra off the water)
2 tsp packed light brown sugar
1 tsp salt
2 c basmati rice (well rinsed and drained)
1/2 c sweetened flaked coconut, lightly toasted (i like 1 c)

combine first four ingredients in heavy large saucepan. bring to
simmer, stir in rice. cover, leaving slight opening for steam to
escape. reduce heat to medium low and simmer 12 minutes. cover
tightly, remove from heat and let stand 10 minutes. transfer rice to
bowl and sprinkle with toasted coconut.
