carmelized shallots

Ingred:
6 T butter
2 pounds shallots (I slice them for max surface area)
3 T sugar
3 T red wine vinegar (I used a mix of balsamic vinegar and actual red wine)
salt
pepper

Directions:
Preheat oven to 400 deg F

In a cast iron pan over medium heat, melt butter and mix in sugar. Toss in shallots and cook until they brown. Add all other ingredients and mix well. Transfer to oven and bake until shallots are tender. Put on pizza, grilled cheese, or just eat them solo.
